Ok, I need to go to banana bread anonymous. Seriously, I’m addicted to my Mom’s chocolate chip banana bread. I could eat about 50 of these loafs and then some. Ever since I can remember, she has been making this banana bread and over the years has mixed different recipes and created the best banana bread ever, and I don’t even like bananas. This recipe is perfect for if you have some old bananas that are going brown and don’t want to throw them away. Be careful who you share this banana bread with though, they might eat it all and force you to make hundreds more.
- 4 smashed bananas
- 1/3 cup melted butter
- 1 cup sugar
- 1 tsp vanilla
- 1 egg, beaten
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chocolate chips
- Mix mashed bananas with butter then add the sugar, egg, and vanilla. In a seperate bowl, mix the baking soda and salt in with the flour then add it to the wet mix gradually until it is blended. Pour the mixture into a loaf pan that has been sprayed with nonstick cooking spray. Add the chocolate chips on top and push them down with a knife until they are covered with batter (they will sink down). Bake at 350 degrees for 50 minutes. Poke a knife in the bread to see if it's done cooking. The knife should come out clean.
- Makes one large loaf or one medium and two small.
- Heat a leftover splice up for 10 seconds in the microwave for chocolate gooey goodness.
- You can also put butter on a splice with an extra bit of taste.
