These double chocolate peppermint CBD cookies are chewy, flavorsome, and make for the perfect Christmas cookies year-round. They use candy canes and peppermint CBD oil to take a regular double chocolate cookie up a notch!

Double Chocolate Peppermint CBD Cookies

To make these double chocolate peppermint CBD cookies, you need the following ingredients; flour, cocoa powder, baking soda, baking powder, salt, dark brown sugar, butter, peppermint extract, vanilla extract, an egg, semi-sweet chocolate chips, candy canes, and peppermint CBD oil.

When making these double chocolate peppermint cookies, it’s better to use bigger pieces of peppermint candy canes instead of finely crushed pieces. I’ve noticed the more powder-like candy cane pieces melt into the cookies and cause them to not be as chewy or gooey in texture.

You also want the peppermint pieces small enough so that they aren’t too hard to chew. I used a mortar and pestle to crush the candy canes but you could also put the candy canes into a plastic baggie and smash them with a hammer.

Baking With CBD Oil

The key to baking with CBD is to put the same amount of doses as servings. I put 24 doses even though my CBD bottle says it should have been 48 (2 squirts is 1 dose) but I don’t usually eat only one cookie so by cutting the amount of CBD in half, you could eat two cookies and get a full dose of CBD. Also, 48 doses seemed like way too much extra oil for this recipe.

When baking with CBD, it’s important not to exceed 340 degrees Fahrenheit since anything over that would burn off terpenes. This ensures you get the most potent form possible.

I like to use a flavored CBD oil so that the taste isn’t incredibly noticeable or bad to taste. For double chocolate peppermint cookies, it makes sense to use a peppermint CBD oil.

Double Chocolate Peppermint CBD Cookies

These cbd cookies are made with peppermint, chocolate, and filled with chocolate chip making them the ultimate double chocolate cookies of your dreams!

Ingredients
  

  • 1 1/4 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup dark brown sugar
  • 1/2 cup butter room temperature
  • 1/2 tsp peppermint extract
  • 1/2 tsp vanilla extract
  • 1 large egg
  • 1 1/4 cup semi-sweet chocolate chips
  • 4 crushed candy canes
  • 24 doses peppermint CBD oil optional
  • cookie icing optional

Method
 

  1. Mix the flour, cocoa powder, baking powder, baking soda, and salt in a medium sized bowl and set aside.
  2. In a stand mixer, mx the butter and sugar on medium-high until it's fluffy. About 2-3 minutes.
  3. Add in the egg, peppermint extract, vanilla extract, and CBD oil to the stand mixer and mix for about 1 minute.
  4. With the mixer on low, add in the flour mixture a little at a time. Be sure to scrape the sides of the bowl and don't add too much at once.
  5. Add in the chocoalte chips and mix.
  6. Sprinkle a little bit of flour into the mixture if it's too sticky and stir it up.
  7. Scoop the dough into balls and slightly flatter them on a baking sheet.
  8. Crush the candy canes and then press a little into each cookie.
  9. Bake at 340F for 8 minutes and then let cookie cool on a rack.
  10. Pour on the cookie icing if you want a little bit of added sweetness.

Notes

Don't bake the cookies for longer than 8 minutes. It's the perfect amount of time for them to be gooey and chewy. They might look like they need another few minutes but they will cool into perfect cookies.

Tips for making these chocolatey CBD cookies

  1. Use room temperature butter – A softer butter will make the cookies have a fudgier texture. 
  2. Use dark brown sugar – Cookies will be denser and more flavorful. Using dark brown sugar adds moisture and causes the cookies to have a chewier texture. This is because dark brown sugar contains molasses!
  3. Don’t use too much flour – Too much flour will make the cookies drier and crumbly. They will have a chalkier taste and not melt in your mouth. I made the mistake of adding 1 1/4 cup flour the first time I made this recipe (and I added the sugar too soon) so they turned out super dry. Although they did taste more like thin mints! If the batter is way to sticky when putting it on a baking sheet, sprinkle a pinch of flour and mix it up.
